Carob – A well known Mediterranean Plant

Ceratonia Siliqua is the latin and botanical name for the evergreen carob tree that grows primarily in the Mediterranean region (Spain, Portugal, Italy, etc.) but also in USA and South America. The fruit of the tree, carob bean or St. John’s bread, has been used by human beings as a source of nutrition for many centuries.

 

Carob’s bean composition

Approximately 10% of carob’s weight is composed of seeds which are rich in water-soluble non-starch polysaccharides that have shown cholesterol-lowering potential in different studies (locust bean gum)

The husk of the pod, which makes up about 90% of the fruit, is exceptional due its high content of carbohydrates, insoluble dietary fibers, tannic acid, protein and minerals.

Olea europea is the latin and botanical name for the evergreen carob native to the coastal area of the eastern Mediterranean region (Spain, Portugal, Italy, etc.) but also in USA and South America. The fruit of the tree, the olive, is of major agricultural importance in the Mediterranean region as it is the source of the olive oil which has been used by human beings as a source of nutrition for many centuries.

 

Olive’s composition

Between 20-32% of the olive’s weight is composed of oils which are rich in tryglicerides (oleic acid,etc.), terpenes (like B-carotene), tocopherols (vitamin E), sterols that have shown to help the absorption of cholesterol in different studies. The water from vegetation (40-55%) contains a wide variety of valuable antioxidants that are not found in other oils. Hydroxytyrosol is thought to be the main antioxidant compound in olives, and believed to play a significant role in the many healthy benefits attributed to olive oil.
